Ingredients:


  • 4 cups of water

  • 4 teaspoons of Better Than Bouillon (seasoned vegetable base)

  • 1 white or yellow onion, diced

  • 2 medium carrots, peeled and sliced

  • 2 medium potatoes, peeled and diced

  • 2 stalks of celery, chopped

  • 1 cup of noodles of your choice (ex: egg noodles, whole wheat, or gluten-free)

  • 1 handful of fresh dill, chopped

  • 1 handful of fresh parsley, chopped

  • Fresh garlic cloves, minced (cook with your heart)

  • 1 teaspoon of seasoned salt

  • 2 teaspoons of onion powder

  • 1 teaspoon of garlic powder

  • Salt and pepper, to taste

  • Optional: 1 cup cooked chicken, shredded


Instructions:


  • Step 1: Sauté the Vegetables

    In a large pot, heat a splash of olive oil over medium heat. Add the sliced carrots, diced potatoes and onions, and chopped celery. After a few minutes add the minced garlic and continue to sauté the vegetables until they begin to soften.


  • Step 2: Add the Broth

    After the vegetables have softened, pour in the water and add the Better Than Bouillon along with all of the other seasonings. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Allow the soup to simmer for about 15-20 minutes, giving the flavors time to blend.


  • Step 3: Incorporate the Noodles

    Once the broth has simmered, add your choice of noodles to the pot. For egg noodles, they typically cook in about 7-10 minutes. Stir the soup occasionally to prevent sticking. If you're adding chicken, this is the perfect time to include that.


  • Step 4: Garnish

    Once the noodles are cooked, stir in the fresh dill and parsley. Season with salt and pepper to taste.
