I’m revealing the secret to making the best cheese enchiladas you'll ever taste, perfectly complementing the red and green enchilada sauces you can find in the Clean Food section!
Perfecting the Filling
When I make cheese enchiladas I like to use a mix of jack and pepper jack cheese. I always buy the blocks of cheese and shred the cheese myself. Pre-shredded cheese often contains added preservatives to maintain freshness and prevent clumping, shredding cheese at home ensures a more natural flavor and texture.
The secret to the best cheese enchiladas is enhancing the filling. While cheese alone is great, you can take your enchiladas to the next level by adding a few extra ingredients. Ingredients
1 1/2 cup colby jack cheese, shredded
1 1/2 cup pepper jack cheese, shredded
1/2 white or yellow onion, diced

1 teaspoon seasoned salt
1 teaspoon garlic powder
1 teaspoon onion powder
sauce of your choice
Instructions for Assembling Enchiladas
Red or Green?
Prepare Tortillas:
Stack all your tortillas together.
Sauté Onions:
Dice 1/2 of a white or yellow onion and sauté in oil and minced garlic. Season with seasoned salt, garlic powder, and onion powder.
Shred Cheese:
Shred about 1 1/2 cup of colby jack and 1 1/2 cup of pepper jack cheese. Set aside in a bowl.
Prepare Baking Dish:
