Ingredients
1/2 white or yellow onion, rougly chopped
1 jalapeño, whole
1 poblano pepper, whole
cloves garlic (cook with your heart)
2 (4-oz) cans of green chiles
1/2 - 1 cup vegetable broth (depending on consistency preference)
1 1/2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
Instructions
Roast the onion, peppers, and garlic: Roast chopped onion, peppers, and garlic cloves on a saucepan over the stove until charred. Once charred, cut off jalapeño and poblano stem.
Blend the ingredients: After roasting and removing stems, transfer the all of the roasted goodness into a tall storage container. Add the broth (start with 1/2 cup, you can always add more later), onion and garlic powder, and cumin. Blend with a hand blender until you have a smooth mixture. A blender or a food processor will work as well.
