  • 1 lime, juiced

  • Salt, to taste


For the Black Beans


  • 1 can (15 oz) of black beans, drained and rinsed

  • Garlic cloves (cook with your heart), minced

  • 1 tsp cumin

  • 1 tsb chili powder

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper to taste


For the Fajita Veggies


  • 1 bell pepper (any color), sliced

  • 1 small red onion, sliced

  • 1 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp ground chili powder

  • 1 tsp onion powder

  • Salt and pepper to taste


For the Chipotle Honey Chicken


  • 2 chicken breasts, cut into bite-sized pieces

  • 3 tbsp honey

  • 2-3 chipotle peppers in adobo

  • Garlic cloves (cook with your heart), minced

  • 1/4 c fresh lime juice

  • 1/4 c loosely packed cilantro, chopped

  • 2 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cumin

  • Salt and pepper to taste

  • Avocado or guacamole

  • Shredded cheese, Chipotle uses Monterey Jack

Step-by-Step Instructions


Let’s get cooking! Follow these simple steps to prepare your burrito bowl.


Prepare the Chipotle Honey Chicken


  1. Add chipotle peppers, honey, lime juice, minced garlic cloves, and spices into a bowl. Mix with hand blender until sauce is smooth, then add in the chopped cilantro.


  2. Pour the marinade into a Ziploc bag, toss in the chicken breasts, and seal it up. Let the chicken soak in the flavors for as long as you want—the longer, the better!


  3. Place the chicken and marinade in a skillet and cook for approximately 6-8 minutes, stirring occasionally until fully cooked.


Prepare the Cilantro Lime Rice


  1. Rinse your rice under cold water until the water runs clear. This will remove excess starch, allowing for fluffier rice.


  2. In a medium pot, bring 2 cups of water to a boil. Add the rice & bay leaves and reduce the heat to low, cover, and simmer for about 15 minutes. The liquid should be absorbed and the rice fluffy.


  3. Once the rice is cooked, fluff it with a fork. Stir in lime juice and chopped cilantro, add salt to taste. Set aside.

Cook the Black Beans


  1. In a small saucepan over medium heat, combine the black beans with seasonings, garlic, salt, and pepper to taste.


  2. Cook for about 5-7 minutes until thoroughly heated, stirring occasionally to prevent sticking.


Sauté the Fajita Veggies


  1. In a skillet, heat olive oil over medium heat.


  2. Add the sliced bell pepper and red onion. Season with salt, pepper, cumin, onion powder, and chili powder.
